Role Overview
Assist the Chef de Cuisine and Sous Chef with kitchen operations and replace them during their absence.
Supervise staff and maintain high standards of food preparation to deliver an excellent guest and member experience.
Assist with food cost controls and monitor Commis-level activities.
Key Duties and Responsibilities
- Assign tasks to Demi Chefs and Commis Chefs and check that they are completed correctly.
- Maintain positive employee relations and motivate colleagues.
- Review the main information board for banquet and organizational changes.
- Ensure night shift coverage and pass all relevant information to the next shift.
- Complete HACCP forms and maintain hygiene standards.
- Ensure food preparation meets standards and prepare and present high-quality food.
- Keep working areas clean and tidy and prevent cross-contamination.
- Prepare mise en place for all relevant menus.
- Assist with resolving guest queries in a timely and efficient manner.
- Ensure food is good quality and stored correctly.
- Contribute to cost control, gross profit margins, and departmental financial targets.
- Assist with staff training, report maintenance and hazard issues, and comply with hotel, fire, health, and food safety requirements.
