Hygiene Responsibilities
- Lead the hygiene team and ensure hygiene schedules are completed through resource deployment, planning, and continuous improvement.
- Maintain cleanliness, hygiene, food safety, and food protection standards in all food and beverage areas.
- Create SOPs, HACCP manuals, awareness posters, and food safety documentation and records.
- Respond to audits and corrective action summaries within agreed timescales.
Stewarding Responsibilities
- Supervise stewarding employees, facilities, operations, and costs.
- Keep floors, work areas, back-of-house areas, equipment, and surrounding areas clean and free of hazards.
- Ensure cleaning activities, water temperatures, chemical levels, and cleaning schedules are documented.
- Direct and assist stewards, manage equipment storage, and oversee waste segregation and disposal data.
- Order and rotate kitchen cleaning supplies and maintain daily breakage and equipment records.
Role Expectations
- Lead and supervise hygiene and stewarding team members during contracted hours.
