Role Overview
Support seafood preparation and production in the Central Kitchen for Al Safadi Restaurants, Oventine, and Table 25.
Maintain the quality, freshness, and consistency of seafood products across the group.
Responsibilities
- Assist with cleaning, filleting, portioning, and preparation of fish and seafood.
- Prepare seafood mise en place for daily production and service.
- Follow standardized recipes, preparation methods, and portioning guidelines.
- Check product freshness and report quality concerns to the Chef de Partie.
- Handle, label, store, and rotate products according to FIFO principles.
- Maintain compliance with food safety, hygiene, and HACCP standards.
- Keep the seafood section, tools, and equipment clean and organized.
- Support production, special orders, stock control, and other section-related tasks.
- Develop culinary skills under the guidance of senior kitchen staff.
Qualifications
- One to two years of professional kitchen experience, preferably including seafood preparation.
- Basic knowledge of seafood handling, cleaning, preparation, storage, and freshness standards.
- Basic understanding of food safety and hygiene practices; HACCP certification is advantageous.
- Willingness to learn and take direction from senior kitchen staff.
