Primary Objective

  • To serve as the primary operational leader in the kitchen, bridging the gap between the Executive Chef’s strategic vision and daily kitchen execution.
  • Maintain the absolute authenticity, quality, and consistency of the Arabic menu, ensuring seamless team coordination, cost efficiency, and strict adherence to food safety standards.

Key Responsibilities

  • Operational Leadership: Manage daily kitchen workflow, supervising all stations to ensure service timelines, plate presentation, and flavor profiles meet high standards.
  • Authentic Execution: Ensure all dishes (Grills, Mezzes, Slow cooked specialties, and traditional Arabic pastries) are prepared using traditional techniques and highest quality ingredients.
  • Team Supervision & Mentorship: Lead and train the kitchen brigade, including CDPs and Commis chefs; foster a culture of discipline, cleanliness, and culinary excellence.
  • Quality Assurance: Conduct rigorous daily checks on mis en place and final plate presentation; ensure adherence to standardized recipes and quality benchmarks.
  • Cost & Inventory Oversight: Manage station level ordering, inventory rotation (FIFO), and wastage control; assist Executive Chef in monitoring food costs.
  • HACCP & Hygiene Compliance: Act as a role model for kitchen hygiene; maintain 5 star cleanliness standards; ensure all staff follow ADFCA and HACCP protocols.
  • Communication: Work closely with Restaurant Manager to resolve service issues, gather guest feedback, and refine menu based on operational performance and customer trends.

Requirements

  • Expertise: Minimum 5+ years of experience in a professional kitchen, with at least 3 years specializing in authentic Arabic/Middle Eastern cuisine.
  • Culinary Mastery: Deep technical knowledge of regional Arabic ingredients, spice blends, and cooking methods (e.g., proper charcoal grilling, traditional oven work, mezze assembly).
  • Leadership: Proven ability to manage a high pressure, fast paced kitchen environment and mentor diverse staff.
  • Arabic Culinary Background: Strong preference for candidates with an Arabic cultural background or extensive experience working in top tier Arabic dining establishments in the UAE.
  • Operational Acumen: Strong organizational skills, with ability to manage inventory, food costs, and daily administrative duties efficiently.
  • Professional Standards: High level of discipline, professional grooming, and commitment to maintaining highest food safety (HACCP) standards in Abu Dhabi.
