Responsibilities
- Execute the preparation, baking, and finishing of a variety of desserts, cakes, and sweet treats according to standardized recipes
- Assist in maintaining the pastry mis en place, ensuring all raw ingredients and finished goods are organized and stored correctly
- Perform daily quality checks on all pastry items to ensure they meet visual and taste benchmarks
- Monitor ingredient stock levels for the pastry section, ensuring proper stock rotation (FIFO) and minimizing wastage
- Strictly adhere to ISO and HACCP food safety standards, keeping accurate records of temperature logs
- Operate and maintain all pastry related equipment with care, ensuring they are cleaned and sanitized according to procedures
Requirements
- Proven experience as a Commis Chef or DCDP in a high volume bakery or pastry production environment
- Technical knowledge of baking science, dessert assembly, and decoration
- Strong attention to detail regarding recipe adherence and presentation
- Ability to work effectively within a team in a fast paced environment
- Solid understanding of food safety, hygiene, and kitchen sanitation practices

Primary Objective
- To support the pastry station in the consistent production of high quality desserts, pastries, and confectionery items under the guidance of the Chef De Partie, while maintaining HACCP food safety protocols in a high volume production kitchen.
Key Responsibilities
- Execute the preparation, baking, and finishing of a variety of desserts, cakes, and sweet treats according to standardized recipes.
- Assist in maintaining the pastry mis en place; ensure all raw ingredients and finished goods are organized and stored correctly.
- Perform daily quality checks on all pastry items to ensure they meet visual and taste benchmarks.
- Monitor ingredient stock levels for the pastry section, ensuring proper stock rotation (FIFO) and minimizing wastage.
- Strictly adhere to ISO and HACCP food safety standards; keep accurate records of temperature logs for ovens, chillers, and freezers.
- Operate and maintain all pastry related equipment (mixers, proofers, ovens, blast chillers) with care, ensuring they are cleaned and sanitized according to established procedures.
