Position Overview
- Seeking an experienced, passionate, and sophisticated Italian National General Manager to oversee all operations at premier Italian fine dining restaurant.
- Custodian of guest experience, brand identity, and financial performance.
- Bridge between back of house culinary artistry and front of house service excellence.
Key Responsibilities
- Maintain high profile presence on dining room floor during peak service hours, cultivating VIP relationships.
- Establish and enforce fine dining service standards including table side service, wine presentation, and seamless pacing.
- Ensure team accurately communicates heritage, regionality, and ingredients of menu items.
- Maintain meticulous standards for cleanliness, lighting, music, and temperature.
- Partner with Sommelier to manage extensive wine program prioritizing Italian varietals.
- Work closely with Executive Chef on menu changes, inventory controls, and pricing strategies.
- Manage P&L, driving revenue while controlling prime costs.
- Oversee procurement of specialized Italian imports and local luxury ingredients.
- Design efficient labor schedules balancing service with financial targets.
- Hire, train, and mentor high performing front of house team.
- Foster collaborative 'one house' culture between kitchen and service team.
