- 4 years of experience as a Pastry Sous Chef
- Knowledge of HACCP and Dubai Municipality food safety regulations

Job Summary
- The Pastry & Cake Sous Chef is responsible for assisting in managing the pastry section of the kitchen, specializing in cakes, desserts, pastries, and baked goods.
- The role ensures high standards of taste, presentation, hygiene, and consistency while supervising pastry staff and supporting menu development.
Key Responsibilities
- Prepare and oversee the production of cakes, pastries, desserts, and baked items.
- Ensure consistency in flavor, presentation, and portion sizes.
- Create custom cakes, celebration cakes, and specialty desserts.
- Decorate cakes using fondant, buttercream, chocolate work, and other techniques.
- Supervise pastry chefs, bakers, and commis in the pastry section.
- Ensure smooth workflow during production and service hours.
- Train junior pastry staff on recipes, techniques, and presentation standards.
- Ensure all pastries and desserts meet restaurant quality standards.
- Monitor freshness, taste, and visual presentation of all products.
- Maintain proper storage of pastry ingredients and finished products.
- Assist the Executive Chef in developing new dessert menus.
- Introduce seasonal pastries and innovative cake designs.
