Job Summary
The Operations Director leads food and beverage operations across a multi-site, multi-location portfolio.
The portfolio includes owned venues, client-operated or managed venues, and food and beverage consultancy projects.
The role applies consistent operating principles, standards, and disciplines across all sites.
The role owns revenue growth, profit and loss, operating standards, guest experience, brand curation, compliance, and venue-team leadership.
Revenue Generation and Commercial Creativity
- Own portfolio revenue performance and set growth plans covering sales, covers, average spend, and revenue mix.
- Develop new concepts, formats, menus, dayparts, offers, events, partnerships, and activations that create measurable incremental revenue.
- Develop income streams including events, private hire, catering, delivery, retail, membership, sponsorship, and commercial partnerships.
- Lead menu engineering and pricing architecture to grow spend per head and margin.
- Pilot ideas at individual sites, measure results against a baseline, and scale successful initiatives.
- Improve capacity utilization and yield across trading periods and target weak dayparts and days.
- Work with marketing and brand teams to convert footfall and awareness into trade and measure promotional return.
