Responsibilities
- Lead and oversee the wine and sake programme
- Curate and maintain an exceptional wine list
- Recommend premium wine and sake pairings
- Lead, coach, and develop the Sommelier team
- Drive wine and beverage sales through expert recommendations and upselling
- Manage cellar inventory, purchasing, and supplier relationships
- Monitor beverage costs, stock levels, and wastage
- Deliver memorable dining experiences for VIP and international guests
- Ensure all wine service follows luxury hospitality standards
- Stay current with global wine trends
Requirements
- Minimum 5 years' experience as a Sommelier in luxury hospitality
- At least 2 years leading a Sommelier team
- WSET Level 2 or 3 preferred
- Strong knowledge of Old World and New World wines
- Knowledge of sake is highly desirable
- Experience pairing wines with Japanese or Asian cuisine is an advantage
- Experience working with VIP and international clientele
- Strong leadership, coaching, and commercial awareness

Role Overview
- We are seeking an experienced and passionate Head Sommelier to join TAPASAKE, our award winning lifestyle dining destination where Japanese cuisine meets Mediterranean flavors.
Key Responsibilities
- Lead and oversee the wine and sake programme, ensuring it reflects TAPASAKE's luxury dining concept.
- Curate and maintain an exceptional wine list that complements Japanese Mediterranean cuisine.
- Recommend premium wine and sake pairings to enhance the guest experience.
- Lead, coach, and develop the Sommelier team to deliver exceptional service standards.
- Drive wine and beverage sales through expert recommendations and upselling.
- Manage cellar inventory, purchasing, and supplier relationships.
- Monitor beverage costs, stock levels, and wastage to achieve financial targets.
- Deliver memorable dining experiences for VIP and international guests.
- Ensure all wine service follows luxury hospitality standards.
- Stay current with global wine trends and continuously improve the beverage programme.
Ideal Candidate
- Minimum 5 years' experience as a Sommelier in luxury hospitality.
- At least 2 years leading a Sommelier team.
- WSET Level 2 or 3 preferred.
- Strong knowledge of Old World and New World wines.
- Knowledge of sake is highly desirable.
