Role Overview

Food Safety Officer role within a hospitality operation covering hotel dining concepts, kitchens, catering facilities, and food production areas.

The position leads food safety, hygiene, sanitation, compliance, training, inspections, and continuous improvement activities.

Compensation

  • Fixed salary of AED 3,600 per month.

Required Qualifications

  • Bachelor's degree in Food Science, Food Safety, Environmental Health, or a related field.
  • Previous experience in a Food Safety and Hygiene Department within a luxury five-star hotel group is essential.
  • Minimum five years of experience in the hospitality and food production industry.
  • Strong understanding of local food safety regulations, international standards, and HACCP principles.
  • Ability to deliver training and communicate food safety concepts to diverse teams.
  • Strong analytical, communication, negotiation, administration, and reporting skills.
  • Computer literacy with proficiency in Word, PowerPoint, Excel, and Outlook.
  • Fluency in English is required; Arabic and Hindi are advantageous.

Preferred Qualification

  • Certification in food safety management systems such as HACCP and ISO 22000 is highly preferred.

Policies and Sanitation

  • Maintain sanitation and government-certification documentation across all dining concepts and kitchen areas.
  • Create, implement, and maintain food safety policies, procedures, and guidelines aligned with local and international standards.
  • Review and update policies for regulatory changes, emerging trends, and industry best practices.
  • Establish cleaning schedules and hygiene audit checklists for Front of House and Back of House areas.

Inspections and HACCP

  • Conduct inspections and audits of food preparation, storage, kitchen, dining, and catering areas.
  • Document findings and corrective actions and address identified non-compliance.
  • Maintain the HACCP system, including hazard analysis, critical control points, monitoring procedures, and accurate records.
  • Conduct HACCP reviews and train Food and Beverage teams on HACCP implementation.

Suppliers and Incidents

  • Validate supplier compliance with food safety standards and review certifications, inspections, and audit documentation.
  • Assist with supplier selection and maintain an up-to-date approved supplier database.
  • Develop incident response protocols, investigate incidents, report to authorities, and implement preventive actions.
  • Work with regulatory agencies during inspections and audits and respond to findings or recommendations.

Training and Team Support

  • Prepare training presentations and materials and evaluate the effectiveness of food safety training programmes.
  • Provide guidance and support on food safety questions, concerns, and challenges.
  • Lead by example, support operational teams, monitor efficiency, and promote safe working practices.

Reporting and Improvement

  • Prepare management reports covering key metrics, trends, findings, and areas for improvement.
  • Maintain confidentiality and security of food safety records and information.
  • Stay current with international hospitality trends and incorporate appropriate improvements into operations.
