Role Overview

Oversee daily operations across hotel restaurants, banquets, room service, and other food and beverage outlets.

Lead service teams while maintaining exceptional guest experiences, luxury standards, cleanliness, efficiency, revenue performance, and cost control.

Operational Responsibilities

  • Supervise front-of-house team members during shifts and ensure adherence to luxury service protocols and five-star standards.
  • Train and motivate new team members, ensure smooth operations, complete shift handovers, and maintain inter-departmental communication.
  • Plan service preparations, manage stock and supplies, control costs, reduce waste, and place timely orders.
  • Drive revenue through upselling programs and ensure reporting, checklists, task lists, and closure paperwork are completed.
  • Handle guest complaints, anticipate guest needs, and maintain consistent service delivery in line with brand SOPs.
  • Ensure food and beverage product knowledge, correct cash handling, food safety, fire safety, health and security compliance, and outlet security procedures.
  • Maintain team punctuality, courtesy, appearance, grooming, and compliance with company brand standards.

Requirements and Qualifications

  • 3–5 years of food and beverage service experience, including 1–2 years in a supervisory role in a luxury or five-star hotel or resort.
  • Diploma or degree in Hospitality Management, Hotel Management, or a related field is preferred.
  • Extensive knowledge of fine dining service, wine and beverage pairings, and international cuisine.
  • Strong leadership, communication, interpersonal, problem-solving, and high-volume service skills.
  • Proficiency in POS systems, Microsoft Office, and hospitality software.
  • Food safety certification and fluency in English are required; additional languages are advantageous.
  • Flexibility for varied shifts, including evenings, weekends, holidays, and extended hours, plus the physical ability to stand, lift moderate weights, and navigate multi-level outlets.
