Job Description

  • Maintains the standards of performance as detailed in the Departmental Operations Manual
  • Having good knowledge of his duties and responsibilities, basic cooking skills and appropriate taste for the dishes

Main Duties

  • Assists in establishing the identity of the outlet by providing the standards of food presentation
  • Is aware of the method of preparation and the standard recipe for every menu items
  • Maintains and cleans all work areas, kitchen equipment and utensils
  • Co ordinates with colleagues regarding operational problems
  • Is familiar with operational procedures of all equipment
  • Assists in implementation of food safety and hygiene standards including HACCP
  • Participates in regular meetings and briefings
  • Responds to changes in Food and Beverage function

Financial And Revenue Responsibilities

  • Ensure each kitchen runs at an acceptable food cost
  • Minimize wastage
  • Apply FIFO procedures

Training and Human Resources

  • Attend training and meetings as required
  • Participate in scheduled training and development programs
  • Provide training to commis and ensure their knowledge is up to required level
  • Ensure workplace free of discrimination, harassment and victimisation
  • Treat complaints of harassment and discrimination promptly and confidentially
  • Treat customers and colleagues from all cultural groups with respect

Guest Service Responsibilities

  • Ensure guest needs and expectations are met by providing consistently high standard of food preparation and presentation

Miscellaneous

  • Report for duty punctually wearing correct uniform and name tag
  • Maintain high standard of personal appearance and hygiene
  • Provide friendly, courteous and professional service
  • Maintain good working relationships with colleagues
  • Read and understand Employee Handbook and adhere to rules and regulations
  • Comply with local legislation
  • Respond to changes in department as dictated by hotel needs
  • Be flexible and extend job duties as assigned

Health and Safety

  • Ensure all potential and real hazards are reported immediately
  • Be fully conversant with departmental Fire, Emergency and Bomb procedures
  • Ensure emergency procedures are rehearsed and enforced
  • Ensure safety of persons and property
  • Use safe manual handling techniques and practice safe work habits

Confidentiality

  • Ensure confidentiality and secure storage of intellectual property and databases
  • Ensure Hotel, Customer and Staff information is kept confidential
