Job Description

  • Commis I (Arabic Cold Kitchen) position at Sofitel in Dubai.

Administration

  • Maintains standards of performance as detailed in the Departmental Operations Manual.
  • Assists in establishing outlet identity through food presentation standards.
  • Follows standard recipes and preparation methods for all menu items.
  • Maintains and cleans all work areas, kitchen equipment, and utensils to high hygiene standards.
  • Coordinates with colleagues on operational problems.
  • Familiar with operational procedures of all kitchen equipment and operates them correctly.
  • Assists in implementing food safety and hygiene standards including HACCP.
  • Participates in regular meetings and briefings.
  • Responds to changes in Food and Beverage function.

Financial and Revenue Responsibilities

  • Ensures each kitchen runs at an acceptable food cost.
  • Minimizes wastage.
  • Applies FIFO procedures.

Training and Human Resources

  • Attends training and meetings as required.
  • Participates in scheduled training and development programs.
  • Ensures a workplace free of discrimination, harassment, and victimisation.
  • Treats complaints of harassment and discrimination promptly and confidentially.
  • Treats customers and colleagues from all cultural groups with respect and sensitivity.
  • Identifies and deals with cross cultural conflict issues.

Guest Service Responsibilities

  • Ensures guest needs and expectations are met through high standard food preparation and presentation.

Miscellaneous

  • Reports for duty punctually in correct uniform and name tag.
  • Maintains high standard of personal appearance and hygiene.
  • Provides friendly, courteous, and professional service.
  • Maintains good working relationships with colleagues and other departments.
  • Reads and adheres to Employee Handbook and hotel rules.
  • Complies with local legislation.
  • Responds to changes in department as needed.
  • Extends job duties as assigned, including redeployment if required.
  • Complies with reasonable requests from supervisors.
  • May be assigned to other duties as required by business levels.

Health and Safety

  • Reports all potential and real hazards immediately.
  • Fully conversant with departmental Fire, Emergency, and Bomb procedures.
  • Ensures emergency procedures are rehearsed and enforced.
  • Ensures safety of persons and property by applying Hotel Regulations.
  • Ensures staff work in a safe manner.
  • Uses safe manual handling techniques and follows Accor HSE policies.
