Main Duties

  • Maintains standards of performance as detailed in the Departmental Operations Manual.
  • Assists in establishing the identity of the outlet by providing standards of food presentation.
  • Is aware of method of preparation and standard recipe for every menu item.
  • Maintains and cleans all work areas, kitchen equipment and utensils.
  • Coordinates with colleagues regarding operational problems.
  • Familiar with operational procedures of all kitchen equipment.
  • Assists in implementation of food safety and hygiene standards including HACCP.
  • Participates in regular meetings and briefings.
  • Responds to changes in Food and Beverage function.

Financial and Revenue Responsibilities

  • Ensure each kitchen runs at an acceptable food cost.
  • Minimize wastage.
  • Apply FIFO procedures.

Training and Human Resources

  • Attend training and meetings as required.
  • Participate in scheduled training and development programs.
  • Ensure workplace free of discrimination, harassment, and victimisation.
  • Treat complaints of harassment and discrimination promptly and confidentially.
  • Treat customers and colleagues from all cultural groups with respect.

Guest Service Responsibilities

  • Ensure guest needs and expectations are met by providing consistently high standard of food preparation and presentation.

Miscellaneous

  • Report for duty punctually wearing correct uniform and name tag.
  • Maintain high standard of personal appearance and hygiene.
  • Provide friendly, courteous, and professional service at all times.
  • Maintain good working relationships with colleagues and other departments.
  • Read and understand the hotel's Employee Handbook.
  • Comply with local legislation as required.
  • Respond to changes in the department as dictated by hotel needs.
  • Be flexible and extend job duties as assigned.

General Duties: Health and Safety

  • Ensure all potential and real hazards are reported immediately and rectified.
  • Be fully conversant with departmental Fire, Emergency and Bomb procedures.
  • Ensure all emergency procedures are rehearsed, implemented and enforced.
  • Ensure safety of persons and property by applying Hotel Regulations.
  • Use safe manual handling techniques and practice safe work habits.
  • Be fully conversant with hotel fire procedures, security procedures, health and safety policy.
