Responsibilities
- Take full responsibility for the cold kitchen section
- Ensure all dishes from the section are prepared and presented to required standards
- Maintain proper mise en place and readiness for service
- Prepare, cook, and present dishes according to recipes and specifications
- Monitor food quality and report issues to senior chefs
- Coordinate with other sections to ensure timely delivery of orders
- Support high volume service periods, including weekends and beach events
- Guide and support Commis Chefs and kitchen assistants within the section
- Follow and enforce food safety, hygiene, and HACCP standards
- Monitor stock levels and ensure proper stock rotation (FIFO) to minimize wastage
Requirements
- Proven experience as a Chef de Partie or strong Demi Chef de Partie in a beach club, resort, or high volume restaurant
- Solid knowledge of culinary techniques relevant to the cold kitchen section
- Ability to manage a section independently during service
- Good communication and teamwork skills
- Ability to work under pressure in a fast paced, outdoor hospitality environment

Main Duties & Responsibilities
- Take full responsibility for designated kitchen section (cold).
- Ensure all dishes are prepared and presented to required standards.
- Maintain proper mise en place and readiness for service.
- Prepare, cook, and present dishes according to recipes and specifications.
- Ensure consistency in taste, portioning, and presentation.
- Monitor food quality and report issues to senior chefs.
- Coordinate with other sections for timely delivery of orders.
- Support high volume service periods, including weekends and beach events.
- Guide and support Commis Chefs and kitchen assistants.
- Provide on the job training and ensure adherence to standards.
- Maintain discipline and teamwork in the kitchen.
- Follow and enforce food safety, hygiene, and HACCP standards.
