About the Role

Responsibilities
- Lead the daily operation of the Sushi Kitchen and ensure exceptional food quality and presentation
- Develop and execute innovative sushi and Japanese inspired menu offerings
- Train, mentor, and develop junior chefs while fostering a positive and high performing team culture
- Maintain the highest standards of hygiene, food safety, and HACCP compliance
- Manage inventory, ordering, stock control, and food cost targets
- Source premium ingredients and collaborate with suppliers to maintain exceptional product quality
- Drive operational excellence through effective scheduling, productivity management, and waste reduction
- Support culinary activations, special events, and member dining experiences
- Build strong relationships with members through exceptional service and culinary engagement
Requirements
- 5+ years of experience in high end Japanese restaurants, luxury hotels, resorts, or private clubs
- Strong expertise in sushi preparation, Japanese cuisine, seafood handling, and knife techniques
- Proven leadership experience managing and developing culinary teams
- Strong understanding of food costing, inventory management, and kitchen operations
- HACCP knowledge and commitment to food safety excellence
- Ability to thrive in a fast paced luxury hospitality environment
- PIC Certification is a plus

About the Role
- Reporting to the Director of Culinary, you will lead the Sushi Kitchen, overseeing daily operations, menu development, food quality, team performance, and operational excellence.
Key Responsibilities
- Lead the daily operation of the Sushi Kitchen and ensure exceptional food quality and presentation.
- Develop and execute innovative sushi and Japanese inspired menu offerings.
- Train, mentor, and develop junior chefs while fostering a positive and high performing team culture.
- Maintain the highest standards of hygiene, food safety, and HACCP compliance.
- Manage inventory, ordering, stock control, and food cost targets.
