Responsibilities
- Support the Head Chef in managing daily sushi kitchen operations
- Lead, guide, and train the sushi team to ensure consistency, quality, and efficiency
- Prepare and present high quality sushi, sashimi, nigiri, maki rolls, and other Japanese dishes
- Ensure proper handling, cutting, storage, and preparation of raw seafood and fresh ingredients
- Maintain consistency in taste, presentation, portioning, and brand standards
- Oversee mise en place, ingredient preparation, sauces, garnishes, and daily production
- Monitor stock levels, ordering, wastage, and portion control
- Ensure strict compliance with food safety, hygiene, and sanitation standards
- Support menu development, product improvements, and new sushi recipe creation
- Maintain a clean, organized, and efficient workstation and kitchen environment
Requirements
- Proven experience in sushi preparation and Japanese cuisine
- Previous experience as a Senior Sushi Chef or Sous Chef
- Strong knowledge of seafood handling, raw fish preparation, sushi rice, sauces, and presentation techniques
- Excellent knife skills and attention to detail
- Ability to lead and train a team in a fast paced kitchen environment
- Strong understanding of food safety, hygiene, and quality standards
- Solid leadership, communication, and teamwork skills
- Adaptable, organized, and able to work in a multicultural environment

About the Role
- We are seeking an experienced and motivated Sous Chef – Sushi to support our kitchen leadership team.
Key Responsibilities
