Responsibilities
- Own the sushi brand's culinary standards across all outlets
- Develop, document, and enforce recipes, portioning guides, and SOPs for sushi production
- Train and mentor kitchen teams on sushi techniques, station setup, and service execution
- Conduct regular outlet visits and quality audits, driving corrective action
- Collaborate with culinary and menu development team on new sushi offerings
- Monitor food safety, allergen protocols, and hygiene compliance
- Support inventory management, fish and ingredient sourcing, and waste reduction
- Partner with operations on food cost control, kitchen KPIs, and labor efficiency
- Lead kitchen readiness for new outlet openings
Requirements
- 5+ years of experience as a Sushi Chef
- At least 2 years in a senior or multi outlet role
- Deep expertise in Japanese culinary techniques (sushi, sashimi, maki, nigiri, omakase)
- Strong knowledge of fish quality, sourcing, butchery, and handling
- Experience building and training kitchen teams on sushi specific skills
- Solid understanding of food cost, waste control, and operational discipline

What You'll Do
- Own the sushi brand's culinary standards across all outlets — from knife work and fish prep to plating and presentation
- Develop, document, and enforce recipes, portioning guides, and SOPs specific to sushi production
- Train and mentor kitchen teams on sushi techniques, station setup, and service execution
- Conduct regular outlet visits and quality audits, driving corrective action where needed
- Collaborate with the culinary and menu development team on new sushi offerings, seasonal specials, and product trials
- Monitor food safety, allergen protocols, and hygiene compliance in line with UAE regulations
- Support inventory management, fish and ingredient sourcing, and waste reduction
- Partner with operations on food cost control, kitchen KPIs, and labor efficiency
- Lead kitchen readiness for new outlet openings — training teams and embedding brand standards from day one
What Are We Looking For?
- 5+ years of experience as a Sushi Chef, with at least 2 years in a senior or multi outlet role
- Deep expertise in Japanese culinary techniques — sushi, sashimi, maki, nigiri, omakase style preparation
- Strong knowledge of fish quality, sourcing, butchery, and handling best practices
- Experience building and training kitchen teams on sushi specific skills and standards
- Solid understanding of food cost, waste control, and operational discipline
- Passionate about quality, consistency, and authentic guest experience
- Comfortable working across multiple locations in a fast paced, high volume environment
