About the Role

  • Kerzner International currently has a fantastic opportunity for a Pastry Chef de Partie to join the One&Only team at One&Only The Palm Hotel in Dubai.
  • Your responsibilities extend beyond preparing high quality dishes, you will contribute to developing strong working relationships with colleagues and supporting an exceptional culinary experience for our guests.
  • You will be responsible for overseeing your designated kitchen section, ensuring consistency in food quality, maintaining cost control, and upholding our company's core values.
  • This role also involves supervising daily kitchen operations, training junior staff, managing mise en place, and maintaining the highest standards of hygiene and food safety.

Key Duties and Responsibilities

  • Prepare, cook, and present dishes within your designated section according to the kitchen standards.
  • Assist with the creation of menu items and daily specials.
  • Ensure consistency and quality across all food items.
  • Monitor stock levels, place orders, and minimize waste.
  • Maintain high standards of cleanliness and hygiene in your section.
  • Ensure compliance with food safety regulations and HACCP guidelines.
  • Train and supervise Commis Chefs and kitchen assistants.
  • Collaborate with the Sous Chef and Head Chef on kitchen operations.
  • Ensure timely preparation and smooth flow during service hours.
  • Handle equipment with care and report any maintenance needs.
  • Coordinate with other kitchen sections to ensure smooth and efficient service.
  • Support in planning and managing food preparation for banquets, events, and high volume periods.

Additional Responsibilities

  • Inspect ingredients for quality and freshness before use.
  • Ensure proper storage, labeling, and rotation of all food items (FIFO).
  • Assist in developing new recipes and improving existing ones.
  • Monitor portion control to maintain cost effectiveness and minimize wastage.
  • Adhere to company guidelines regarding food safety, cleanliness, and equipment use.
  • Participate in regular kitchen briefings and team meetings.
  • Maintain accurate records for temperature checks, cleaning schedules, and food usage reports.
  • Ensure all kitchen tools and equipment in the section are properly cleaned, maintained, and stored.
  • Address and resolve any issues within the section promptly to avoid delays during service.
  • Step in to assist other sections when necessary to support the overall kitchen operation.
  • Help maintain a positive, professional, and team oriented work environment.
  • Comply with all health, safety, and sanitation standards required by local regulations.
