Role Overview
Oversee meat preparation and butchery operations within the hotel kitchen department.
Ensure high standards of meat quality and collaborate with the kitchen team to deliver dining experiences.
Key Job Responsibilities
- Lead and manage butchers and meat cutters.
- Ensure meat quality, cutting, and presentation standards.
- Oversee handling, storage, and preparation of meats and poultry.
- Maintain food safety and sanitation standards.
- Train and mentor butchery chefs in meat preparation techniques.
- Assist with budgets, procurement, and inventory control.
- Promote excellence in meat craftsmanship and quality control.
- Ensure efficient operations and equipment maintenance.
- Contribute to recipe development and adaptation for meat dishes.
- Stay updated on meat trends, cuts, and sourcing.
- Participate in culinary events, promotions, and guest interactions related to meat dishes.
- Collaborate with culinary departments to ensure a cohesive dining experience.
Health, Safety, and Environment
- Operate safely and in an environmentally responsible manner to protect guests and colleagues.
- Follow company environmental, health, and safety procedures and policies.
Requirements
- Strong knowledge of meat preparation, butchery, meat quality, cuts, and presentation.
- Knowledge of food safety, sanitation, and safe handling and storage of meats and poultry.
- Ability to lead, train, and mentor butchers, meat cutters, and butchery chefs.
- Ability to support efficient butchery operations, inventory control, procurement, and equipment upkeep.
