About the Job

  • Based at Emirates Palace Mandarin Oriental, Abu Dhabi within the Culinary Department
  • Responsible for entire pastry and bakery production
  • Reports to Executive Chef

Key Responsibilities

  • Coordinates closely with Executive Chef on quality and quantity of daily food products
  • Discusses menu price adjustments and determines selling prices of unlisted items
  • Reports staff matters and recommends promotions
  • Checks kitchen equipment functionality
  • Staff planning according to occupancy and business forecast
  • Actively involved with suppliers for best pastry and bakery products
  • Attends daily kitchen briefings
  • Supervises all pastry and bakery staff
  • Ensures highest standard of hygiene
  • Controls staff attendance
  • Prepares all pastry and bakery products per hotel standards
  • Highly cost conscious with efficient production and waste control

Qualifications

  • Experience in high volume luxury hotel chain, minimum three years in similar position
  • Bachelor's degree in culinary arts or relevant field
  • Full knowledge of sanitation requirements
  • High creativity in international cakes, pastries, sugar work, chocolate work, wedding cakes
  • Strong leadership, training, communication, and organizational skills
