About the Role
Emirates Palace Mandarin Oriental in Abu Dhabi is seeking an Executive Pastry Chef to lead the pastry and bakery department.

Responsibilities
- Coordinate closely with the Executive Chef in determining quality and quantity of daily food products
- Discuss and recommend menu price adjustments when necessary
- Report all staff matters to Executive Chef and recommend promotions and transfers
- Check with maintenance that all kitchen equipment is functioning properly
- Plan staff according to occupancy level and business forecast
- Actively involve with suppliers to procure best available pastry and bakery products
- Attend daily kitchen briefings
- Supervise all pastry and bakery staff
- Ensure highest standard of hygiene in entire pastry and bakery section
- Control staff attendance of all pastry and bakery employees
- Prepare all pastry and bakery products in accordance with hotel standards
- Be highly cost conscious and involved in efficient pastry production and waste control
Requirements
- Minimum three years in a similar position at a high volume internationally recognized luxury hotel chain
- Bachelor's degree in culinary arts or relevant field
- Full knowledge of sanitation requirements in handling food
- High level of creativity and specialized knowledge in international cakes and pastries, sugar work, chocolate work, wedding and specialty cakes
- Strong leadership quality, training techniques, excellent communication and organizational skills

- Based at Emirates Palace Mandarin Oriental, Abu Dhabi within the Culinary Department
- Responsible for entire pastry and bakery production
- Reports to Executive Chef

Qualifications
- Experience in high volume luxury hotel chain, minimum three years in similar position
- Bachelor's degree in culinary arts or relevant field
- Full knowledge of sanitation requirements
- High creativity in international cakes, pastries, sugar work, chocolate work, wedding cakes
- Strong leadership, training, communication, and organizational skills
