About the Role

- Recommend menu price adjustments and determine selling prices of unlisted food items
- Supervise all pastry and bakery staff and ensure highest hygiene standards
- Prepare all pastry and bakery products according to hotel standards
- Control staff attendance and conduct daily briefings
- Assist in budgetary and payroll expense control
Requirements
- Minimum 3 years in a similar position in a high volume internationally recognized luxury hotel chain
- Bachelor's degree in culinary arts or relevant field
- Full knowledge of sanitation requirements in handling food
- High level of creativity and specialized knowledge in international cakes and pastries, sugar work, chocolate work, wedding and specialty cakes
- Strong leadership quality, training techniques, excellent communication and organizational skills

About the Job
- Based at Emirates Palace Mandarin Oriental, Abu Dhabi within the Culinary Department, the Executive Pastry Chef is responsible for the entire pastry and bakery production.
- Ensures proper efficiency and profitable functioning of the pastry department, consistent with cost control and profitability margins.
- Reports to the Executive Chef.
Key Responsibilities
- Coordinates closely with the Executive Chef in determining quality and quantity of daily food products.
- Discusses menu price adjustments and determines selling prices of unlisted food items.
- Reports staff matters to Executive Chef and recommends promotions and transfers.
- Checks kitchen equipment functionality and instructs staff on proper use.
- Staff planning according to occupancy and business forecast.
- Actively involved with suppliers to procure best pastry and bakery products.
- Supervises all pastry and bakery staff and ensures highest hygiene standards.
- Controls staff attendance and prepares all pastry and bakery products per hotel standards.
- Responsible for inter kitchen transfers for banquet and a la carte outlets.
- Coordinates with banquet and colleagues on material lists and event orders.
- Works hands on in all aspects of the operation.
- Conducts daily briefing and de briefing of staff members.
Qualifications
- Experience in a high volume internationally recognized luxury hotel chain with minimum three years in a similar position.
- Bachelor's degree in culinary arts or relevant field.
- Full knowledge of sanitation requirements in handling food.
- High level of creativity, specialized knowledge in international cakes and pastries, sugar work, chocolate work, wedding and specialty cakes.
- Strong leadership quality, training techniques, excellent communication and organizational skills.
