Responsibilities
- Maintain standards of performance as per Departmental Operations Manual
- Assist in establishing outlet identity through food presentation standards
- Prepare and cook menu items following standard recipes
- Maintain and clean work areas, kitchen equipment and utensils
- Coordinate with colleagues on operational problems
- Assist in implementing food safety and hygiene standards including HACCP
- Participate in regular meetings and briefings
- Ensure guest needs are met through high standard of food preparation and presentation
Requirements
- Good knowledge of duties and responsibilities, basic cooking skills and appropriate taste for dishes
- Awareness of method of preparation and standard recipes for menu items
- Ability to maintain cleanliness and hygiene standards
- Familiarity with kitchen equipment operational procedures

Main Duties
- Administration: Maintains standards of performance as detailed in Departmental Operations Manual
- Financial and Revenue Responsibilities: Ensure each kitchen runs at acceptable food cost, minimize wastage, apply FIFO procedures
- Training and Human Resources: Attend training, provide training to commis, ensure workplace free of discrimination
- Guest Service Responsibilities: Ensure guest needs met by consistently high standard of food preparation and presentation
Miscellaneous Duties
- Report for duty punctually wearing correct uniform and name tag
- Maintain high standard of personal appearance and hygiene
- Provide friendly, courteous and professional service
- Maintain good working relationships with colleagues
- Read and understand Employee Handbook and adhere to hotel rules
- Comply with local legislation
- Respond to changes in department
- Be flexible and carry out other reasonable duties
General Duties
- Health and Safety: Report hazards, be conversant with fire/emergency procedures, ensure safety of persons and property
- Confidentiality: Ensure confidentiality of intellectual property and data, adhere to Accor Internet and Email policy
- Be fully conversant with hotel fire procedures, security procedures, health and safety policy, facilities and attractions
