Role Purpose

Guest Experience and Service

• Deliver warm, professional, and attentive service throughout the guest journey.
• Welcome guests, anticipate their needs, handle requests and concerns, and contribute to memorable dining experiences.
• Explain menu ingredients, preparation methods, allergens, and beverage offerings accurately.
• Build strong relationships with guests and maintain close attention to detail.

Food, Beverage, and Wine Service

• Maintain knowledge of food, wine, spirits, cocktails, beer, menu changes, seasonal offerings, and beverage products.
• Recommend wine and beverage pairings based on guest preferences and the menu.
• Provide professional wine service, including correct presentation, opening, temperature, handling, glassware, and service standards.
• Participate in tastings, product training, and menu briefings.

Captain Responsibilities

• Lead an assigned service section and maintain consistent service standards.
• Coordinate with Servers, Runners, Host or Hostess, Kitchen, and Bar teams.
• Support and guide Servers, assist with pre-shift briefings, and help coach junior team members.
• Monitor table progress, service timing, guest satisfaction, and service recovery needs.

Server Responsibilities

• Manage assigned tables and follow the established sequence of service.
• Accurately take orders and communicate them to relevant departments.
• Ensure food and beverages are delivered correctly and on time.
• Maintain table presentation and cleanliness and support opening and closing duties.

Teamwork and Operations

• Work closely with Kitchen, Bar, Host, and Front-of-House teams to provide seamless service.
• Attend daily briefings, training sessions, tastings, and team meetings.
• Maintain a clean, organized, and professional service environment.
• Support special events, private dining, activations, and pre-opening activities.

Qualifications and Experience

• WSET Level 2 or Level 3 certification is required.
• Captain candidates need 3–5 years of food and beverage service experience and prior equivalent Captain, Head Waiter, or Senior Server experience.
• Server candidates need 2–3 years of food and beverage service experience in a quality-driven restaurant environment.
• Hospitality, food and beverage, or related qualification is advantageous.

Required Skills and Standards

• Strong wine and beverage knowledge and the ability to recommend pairings confidently are required.
• Excellent English communication, guest engagement, teamwork, attention to detail, and professional presentation are required.
• Candidates must follow company policies and UAE health, safety, hygiene, food safety, grooming, and responsible beverage procedures.
