Bar Manager - Premium Dining

Role Purpose

Pre-Opening and Bar Setup

• Support pre-opening planning and setup of the bar operation.
• Establish operating procedures, service standards, recipes, preparation methods, opening checklists, systems, and workflows.
• Coordinate equipment, glassware, smallwares, storage, mock services, tastings, training, and soft-opening activities.

Beverage Program

• Develop and execute cocktails, mocktails, spirits, wine, beer, and other beverage offerings.
• Maintain standardized recipes, specifications, costing, and presentation standards.
• Research beverage trends and introduce innovative offerings where appropriate.
• Work with culinary and management teams on beverage pairings and dining experiences.

Operations and Guest Experience

• Lead daily bar operations and maintain beverage quality, presentation, cleanliness, and guest service.
• Engage with guests, monitor feedback, resolve concerns, and ensure the bar reflects the Momofuku concept.

Team Leadership

• Recruit, train, coach, schedule, and develop the bar team.
• Conduct briefings, training sessions, tastings, and team development activities.
• Monitor performance and build a knowledgeable, motivated, and professional team.

Inventory and Commercial Performance

• Manage purchasing, receiving, storage, stock control, stock counts, par levels, wastage, and inventory discrepancies.
• Monitor beverage costs, portion and yield control, sales, profitability, and average guest spend.
• Develop promotions and work with Marketing on activations, events, collaborations, and launches.

Compliance and Collaboration

• Ensure compliance with UAE regulations, beverage licensing, food safety, hygiene, sanitation, health and safety, and responsible-service practices.
• Collaborate with restaurant leadership, culinary, Marketing, Purchasing, Finance, and other departments.
• Support special events, private functions, brand activations, and other business initiatives.

Qualifications and Requirements

• Minimum 5 years of bar or beverage operations experience, including 2–3 years in a Bar Manager or equivalent leadership position.
• Premium or luxury dining, pre-opening, beverage-program, UAE or GCC experience is preferred or advantageous as specified.
• Strong knowledge of cocktails, spirits, wine, beer, beverage trends, costing, inventory, purchasing, and stock control.
• Strong leadership, communication, organizational, problem-solving, and premium-service skills.
• Strong English communication skills and proficiency in POS, inventory systems, and Microsoft Office.
