Role Scope
The Sous Chef is responsible for the overall culinary operation of a premium airport lounge.
The role covers food quality, guest satisfaction, food safety, cost control and team performance.
Job Responsibilities
- Take overall responsibility for the kitchen operation.
- Lead food quality, consistency, buffet execution and à la carte execution.
- Manage food cost, wastage and inventory within budget.
- Develop and improve menus and recipes.
- Maintain Arabic, Middle Eastern and International cuisine standards.
- Maintain HACCP and Dubai Municipality food safety compliance.
- Lead, train and develop the culinary team.
- Coordinate with Operations, Procurement and Quality Assurance.
- Support smooth operations during peak flight schedules.
- Handle kitchen emergencies and respond to enquiries.
- Support the quality management system and continual improvement activities.
- Monitor food cost, labour productivity and kitchen KPIs to achieve operational targets.
Job Requirements
- Minimum seven years of experience as a Sous Chef or Junior Sous Chef.
- Minimum four years of experience in the Middle East is mandatory.
- Strong knowledge of Arabic, Middle Eastern and International cuisine.
- Computer literacy.
- Airport lounge, hotel or airline catering experience is preferred.
Work Schedule and Deployment
- Work rotating shifts, weekends and public holidays in a 24/7 airport environment.
- Be flexible to work at any Plaza Premium Group operation within the UAE or internationally based on business requirements.
- Demonstrate professionalism, teamwork and commitment to premium guest service.
