Key Responsibilities
- Ensure the smooth and efficient daily operation and control of the pastry galley according to company policies.
- Direct, coach, support, supervise, and evaluate pastry team members with the Assistant Pastry Chef.
- Produce pastry and dessert assortments meeting required quality and presentation standards.
- Prepare production forecasts and record leftovers to control waste and food costs.
- Supervise setup of pastry and dessert displays in buffet areas.
- Ensure compliance with United States Public Health rules and regulations.
- Ensure cleaning schedules are followed and equipment damage is minimized after each service.
- Prepare pastry shops and pantry areas for announced and unannounced inspections.
- Requisition and transport necessary items from main stores to the pastry galley.
- Ensure recipes, master lists, and yields comply with company standards.
- Complete daily pastry consumption and production recaps as required.
- Coach and train Pastry Cooks and attend required meetings and training activities.
Qualifications
- At least two years of experience as a Chef De Partie Pastry in an upscale hotel, resort, cruise ship, or convention banqueting service.
- Shipboard experience is preferred.
- Very strong management skills in a multicultural and dynamic environment.
- Very strong communication, problem-solving, decision-making, and interpersonal skills.
- Superior customer service, team-building, and conflict-resolution skills.
- Knowledge of personalized service principles, quality standards, delivery systems, and guest-satisfaction evaluation techniques.
- Strong planning, coaching, organizing, staffing, controlling, and evaluation skills.
- Intermediate computer software skills are required.
- Understanding of basic accounting principles, including debits, credits, adjusting entries, and corrections.
