Role Summary

The Kitchen Team Leader is a senior culinary leadership role responsible for overseeing daily kitchen operations across Hostmind's cloud kitchen brands.

This role requires a hands-on leader who can drive operational excellence, maintain the highest food quality standards, manage multi-brand production, and mentor a high-performing kitchen team — all within the unique and fast-paced environment of a cloud kitchen.

Culinary Operations & Leadership

▸ Lead, supervise, and coordinate all kitchen team members across multiple brand stations.

▸ Ensure smooth daily production workflows, shift handovers, and kitchen readiness at all times.

▸ Maintain consistency, quality, and presentation standards across all dishes and brands.

▸ Step in on the line as needed to support during peak hours or staff shortages.

Menu & Recipe Management

▸ Collaborate with the Executive Chef on menu development, seasonal updates, and new brand launches.

▸ Oversee recipe standardization, portion control, and plating consistency across all brands.

▸ Conduct regular recipe costing, yield analysis, and contribute to menu engineering decisions.

Cost Control & P&L

▸ Monitor food cost percentages and work proactively to reduce waste and variances.

▸ Assist in managing the kitchen's contribution to P&L through smart purchasing and production planning.

▸ Manage inventory control, stock rotation, and coordinate with procurement for timely ordering.

Team Development & Culture

▸ Train, coach, and develop kitchen staff to build a skilled, motivated, and accountable team.

▸ Conduct regular performance reviews and identify training needs for team members.

▸ Foster a positive, professional, and safety-first kitchen culture.

Food Safety & Compliance

▸ Enforce and uphold all food safety, hygiene, and HACCP standards at all times.

▸ Conduct regular kitchen audits and ensure full compliance with Dubai Municipality regulations.

▸ Maintain accurate records of temperature logs, cleaning schedules, and allergen management.

Technology & Reporting

▸ Utilize POS and ERP systems (SUPY or similar) for order management and reporting.

▸ Provide weekly/monthly reports on kitchen KPIs, food cost, wastage, and team performance.

▸ Collaborate with operations and aggregator teams to optimize delivery times and kitchen output.

Qualifications & Requirements

10 years of experience in the Food & Beverage industry, with senior leadership exposure.

▸ Proven experience in a Kitchen Team Leader, Head Chef, or multi-unit culinary leadership role.

▸ Strong background in Oriental (Arabic) and International cuisine.

▸ Demonstrated expertise in recipe costing, menu engineering, and P&L management.

▸ Experience managing multiple brands, cloud kitchens, or centralized production environments.

▸ Proficiency in POS and ERP systems (including SUPY or similar).

▸ Degree or technical qualification in Culinary Arts, Hospitality Management, or a related field.

▸ Intermediate to advanced food safety certification (e.g., Level 3 Food Safety or equivalent).

▸ Strong English and computer skills; analytical, structured, and commercially minded.
