Role Overview
Lead the kitchen operation and play a central role in the guest experience at ROKA.
Maintain the high standards of food quality, consistency, presentation, taste, and service that define the restaurant.
ROKA is a contemporary Japanese Robatayaki restaurant collection operating across the Middle East.
Main Duties
- Lead and oversee kitchen operations throughout every service.
- Maintain mise en place and preparation for a smooth, uninterrupted flow of food.
- Lead, mentor, and develop the culinary team through training and support.
- Take responsibility for kitchen performance and consistent food delivery.
- Evaluate guest feedback with senior management and identify dining experience improvements.
- Manage kitchen costs, stock levels, food quality, and waste.
- Maintain health, safety, hygiene, and food safety standards.
- Develop and refine menus with the senior culinary team using seasonal ingredients and Japanese-inspired concepts.
What We Look For
- Genuine love for culinary experiences and strong passion for Japanese cuisine.
- Proven experience as a Head Chef or Executive Sous Chef in a luxury, high-volume restaurant or similar operation.
