Food & Beverage Cost Controller

Role Overview

Key Responsibilities

• Control and record goods flow between food and beverage outlets and issues from stores to user departments.
• Check receiving vouchers against supplier invoices and purchase orders for accuracy.
• Ensure supplier tax invoices comply with FTA guidelines.
• Produce daily food cost-of-sales flash reports.
• Ensure food and beverage stock counts are completed according to company policy.
• Cost recipes before new menu dishes are implemented to ensure appropriate pricing.
• Analyze monthly sales statistics and identify slow-moving items.
• Analyze outlet revenue, cost of sales, and productivity each month.
• Prepare month-end closing reports for food, beverage, tobacco, general stock, and operating supplies.
• Oversee hotel stores and keep stockholding aligned with business levels.
• Conduct ad hoc analysis and restaurant spot checks.

Skills and Experience

• Previous F&B cost control, financial reporting, or accounting experience in hospitality or a related sector is preferred.
• Strong numerical and analytical skills with attention to detail and accuracy are required.
• Knowledge of budgeting, variance analysis, and inventory valuation methods is required.
• Proficiency in Excel and familiarity with accounting or hotel property management systems are required.
• Sun Systems or other finance systems experience is advantageous.
• Clear communication skills and the ability to present financial information to non-financial colleagues are required.
• Candidates should be organized, able to prioritize, and able to meet deadlines in a fast-paced environment.
• Problem-solving ability and the capacity to work independently and in a team are required.

Qualifications and Training

• Basic knowledge of financial management, budgets, and cost controls is required.
• Sound Microsoft Office skills, including Word, Excel, and Outlook, are required.
• A relevant accounting or finance qualification is required.
• Experience or training in inventory control, stocktaking procedures, and cost accounting is advantageous.
• A finance-related tertiary qualification is advantageous.
• Full on-the-job training will be provided on company systems, internal procedures, and reporting standards.
