Job Responsibilities
- Responsible for MEP of predetermined section in the kitchen with strict adherence to recipes, partly supervised by Senior chefs
- Ensure all stocks are kept under optimum conditions, containers are regularly changed & date labels are in place
- MEP done efficiently, prioritizing urgent items. Good time management
- Follow the cleaning schedules for the kitchen and clean section thoroughly and other areas as directed
- Oversee receiving and storage of all produce, fresh & frozen, in accordance with HACCP regulations, including correct stock rotation & storage
- Assist with plate presentation when required
- Follow strict health & hygiene standards
- Keep production records up to date for items prepared by yourself
- Ensure minimum kitchen wastage and maintain accurate records of wastage on your section during prep and service
- Learn & record skills and recipes from Senior Chefs
- Reliably carry out instructions handed down to you by Senior Chefs
- Monitor work done by Commis chefs, ensuring recipes are followed with precision and tastes are consistent
