Responsibilities
- Organise and set up the assigned section of the kitchen efficiently
- Ensure all dishes from the section are prepared consistently according to standard recipes
- Assist Chef de Partie, Sous Chef, and Chef de Cuisine in maintaining culinary standards
- Monitor food and operating costs and control waste
- Train culinary associates in necessary skills
- Ensure sanitation standards for kitchen are met
- Ensure effective food storage, stock rotation, and labelling
Requirements
- Experience in pastry section of a kitchen
- Knowledge of standard recipes and culinary techniques
- Ability to train and supervise culinary associates
- Understanding of sanitation standards and HACCP

Operations
- Organise and set up the assigned section of the Food, Beverage, and Kitchens efficiently.
- Ensure all dishes from that section are prepared consistently and according to standard recipes.
- Assist the Chef de Partie, Sous Chef and Chef de Cuisine in ensuring culinary standards comply with policies.
- Monitor food and operating costs and control these by reducing waste.
- Train culinary associates in necessary skills.
- Work in any sections of kitchen including associate kitchen when necessary.
- Ensure sanitation standards for kitchen are met.
- Ensure operating and kitchen equipment is maintained to a good standard.
- Ensure effective food storage, stock rotation and labelling.
Talent & Culture
- Assist to oversee punctuality and appearance of Kitchen associates.
- Assist in training associates to ensure they have necessary skills.
- Supervise associates within the department, ensuring correct standards and methods.
- Develop skills and effectiveness of Kitchen associates through training, coaching, mentoring.
- Support and demonstrate Rosewood Hotels & Resorts’ Values and Culture Characteristics.
- Ensure associates understand and adhere to rules and regulations.
- Ensure associates follow all hotel, company and local rules regarding fire and hazard safety.
