Job Overview

  • The Commis – Continental is responsible for assisting in the preparation, cooking, and presentation of Continental cuisine under the guidance of the Chef de Partie, Sous Chef, or Executive Chef.

Key Responsibilities

  • Assist in the preparation and cooking of Continental dishes, including soups, salads, appetizers, pasta, sandwiches, grilled items, sauces, and desserts.
  • Prepare ingredients by washing, cutting, portioning, marinating, and organizing mise en place.
  • Follow standardized recipes, portion controls, and presentation standards.
  • Ensure consistency in taste, quality, and appearance of all dishes.
  • Maintain cleanliness and sanitation of workstations, kitchen equipment, and utensils.
  • Store food items properly and follow FIFO (First In, First Out) inventory practices.
  • Assist in receiving, inspecting, and storing food deliveries.
  • Monitor stock levels and report shortages or quality concerns to senior chefs.
  • Comply with all food safety, HACCP, hygiene, and sanitation standards.
  • Support senior chefs during busy service periods and banquet operations, as required.
  • Minimize food waste through proper handling, storage, and portion control.
  • Participate in daily opening, closing, and cleaning procedures.

Qualifications

  • Certificate or diploma in Culinary Arts is preferred.
  • 1–2 years of experience in a Continental or Western cuisine kitchen.
  • Basic knowledge of Continental cooking techniques, ingredients, and food preparation methods.
  • Understanding of food safety and hygiene standards.
  • Ability to work in a fast paced kitchen environment.
