About the role

Run a specific kitchen section and manage a small team of workers.

Prepare culinary dishes in the assigned specialty while maintaining organization, timely delivery, cleanliness, and food safety standards.

Key accountabilities

  • Plan, prepare, and cook menu items according to recipes and HACCP standards.
  • Assist with menu development, food trends, service styles, and new concepts.
  • Conduct inventory checks, manage leftovers, and minimize food wastage.
  • Compile food orders and verify stock, deliveries, and wastage records.
  • Review food costing, sales mix, and menu planning with the Sous Chef.
  • Monitor stock movement, ordering systems, and kitchen stock levels.
  • Report equipment issues and conduct scheduled stock takes with the Storekeeper.
  • Report food safety issues with supporting information for investigation.

Required qualifications and skills

  • Relevant vocational, tertiary, or trade qualifications are required.
  • Culinary school or certified culinary professional training, diploma, or degree is required.
  • A major international brand or hotel apprenticeship is required.
  • At least three years of relevant experience and previous Commis Chef experience are required.
  • Fluent English, food and beverage production knowledge, and food production skills are required.
  • Basic food hygiene course completion, HACCP training, and MS Office literacy are required.
  • Additional trade or relevant training certificates are highly preferred.
