Role Overview
One&Only The Palm Hotel in Dubai is seeking a Chef de Partie for its kitchen team.
The role oversees a designated kitchen section and supports high-quality culinary experiences for resort guests.
The Chef de Partie supervises daily operations, trains junior staff, manages mise-en-place, and upholds hygiene and food safety standards.
Key Duties and Responsibilities
- Prepare, cook, and present dishes in the designated section according to kitchen standards.
- Assist with menu items, daily specials, new recipes, and improvements to existing recipes.
- Create new cocktail recipes and contribute innovative ideas to the department.
- Ensure consistency, quality, presentation, and portion control across food items.
- Monitor stock, place orders, control costs, and minimize waste.
- Maintain cleanliness, hygiene, food safety, and HACCP compliance.
- Train and supervise Commis Chefs and kitchen assistants.
- Collaborate with the Sous Chef, Head Chef, and other kitchen sections.
- Manage mise-en-place and ensure timely preparation during service.
- Support banquets, events, and high-volume food preparation.
- Inspect ingredients and follow storage, labeling, and FIFO rotation procedures.
- Maintain equipment and records and resolve section issues promptly.
