Job Description

  • Ability to utilize forecasts for planning food production, purchasing, and manpower
  • Make requisitions for next day items
  • Prioritize and plan team daily tasks
  • Coordinate purchasing with finance team
  • Conduct interviews and prepare job descriptions
  • Monitor food cost to achieve targets
  • Adhere to departmental operating expenses
  • Review work schedules and payroll
  • Assist with departmental promotions calendar
  • Coordinate with F&B on seasonal programs
  • Ensure effective staff scheduling
  • Ensure menus are costed with standard recipes

Operations

  • Train and develop kitchen team in operating standards
  • Taste and season food appropriately
  • Improve kitchen flow and productivity
  • Lead employees to achieve financial and service targets
  • Foster solution oriented work environment
  • Lead daily briefings and monthly meetings
  • Adhere to Fire, Hygiene, Health and Safety policies
  • Drive team performance including appraisals
  • Ensure team awareness of F&B revenue and food cost targets
  • Interact with guests during service
  • Maintain high grooming standards
