**Job Title:** Chef de Partie – Sushi
Job Purpose
The CDP – Sushi is responsible for preparing high-quality sushi dishes, maintaining food safety standards, leading the sushi section, and ensuring smooth kitchen operations while supporting the culinary team.
Key Responsibilities
- Prepare sushi dishes according to recipes, quality standards, and presentation guidelines.
- Lead and manage the sushi section during daily operations and service hours.
- Supervise, guide, and support junior kitchen staff to ensure proper preparation and consistency.
- Ensure freshness and proper handling of seafood, vegetables, and other ingredients.
- Maintain cleanliness and organization of the sushi station at all times.
- Follow food safety, hygiene, and sanitation standards.
- Monitor stock levels, minimize wastage, and report shortages.
- Support inventory control and proper storage procedures.
- Ensure timely preparation and delivery of dishes during service.
- Assist with menu preparation, new dish development, and continuous improvement of the sushi section.
Requirements
- Previous experience in sushi preparation or Japanese cuisine.
- Leadership experience within a kitchen environment preferred.
- Good knowledge of food safety and hygiene standards.
- Ability to work in a fast-paced environment.
- Strong leadership, teamwork, and communication skills.
- Flexibility to work shifts, weekends, and holidays.
