Job Summary
Assist in managing daily kitchen utility operations and staff.
Oversee dish room operations, night cleaning, back dock cleaning and maintenance, banquet plating, and food running.
Support guest and employee satisfaction while maintaining the operating budget.
Education and Experience
- High school diploma or GED and 3 years of experience in procurement, food and beverage, culinary, or a related professional area.
- Alternatively, a 2-year degree in Hotel and Restaurant Management, Hospitality, Business Administration, or a related major and 1 year of experience in a related professional area.
Day-to-Day Operations
- Order and manage necessary supplies, equipment, tools, and uniforms.
- Schedule events, programs, activities, and the work of employees.
- Monitor ordered materials and maintain current materials.
- Conduct china, glass, and silver inventories and control food, equipment, smallware, and liquor inventories.
- Inspect supplies, equipment, and work areas for efficient service and conformance to standards.
- Investigate employee accident reports and follow up as needed.
- Manage equipment, china, glass, silver, dish room machinery, and food holding and transport equipment.
