- Prepare sushi ingredients including rice, seafood, vegetables, sauces, and garnishes according to company recipes and standards
- Produce sushi rolls, nigiri, sashimi, and other menu items with consistency, accuracy, and attention to presentation
- Ensure proper food handling, storage, labeling, and rotation following HACCP and food safety guidelines
- Monitor ingredient quality and report any shortages or quality issues
- Maintain cleanliness and organization of the production area, equipment, and utensils
- Work efficiently in a fast paced environment while meeting daily production targets
- Support the kitchen team in maintaining smooth operations and continuous product quality
Requirements
- Previous experience as a Sushi Chef or Sushi Production Chef in a Japanese restaurant or central kitchen
- Good knowledge of sushi preparation techniques, knife skills, and food safety standards
- Ability to follow standardized recipes and production procedures
- Strong organizational skills, attention to detail, and ability to work under pressure
