Role Overview
Lead café floor and back-of-house operations as a hands-on Restaurant Floor Manager.
Own outlet financial performance, develop a high-performing team, and deliver exceptional guest experiences.
Floor and Guest Operations
- Lead pre-shift briefs, sectioning, table turns, speed of service, team deployment, and guest recovery from the floor.
- Maintain high operational and service standards while remaining visible and hands-on during each shift.
Financial and Commercial Management
- Conduct weekly flash reviews and track sales, COGS, labor, and performance gaps.
- Build the annual outlet budget and manage monthly re-forecasts for sales, labor hours, and purchasing.
- Drive AOV, attach rate, NPS, mystery shopper scores, waste, stock variance, and staff productivity.
Scheduling and Inventory
- Build schedules, approve timesheets, and optimize staffing coverage against labor-to-sales targets.
- Manage ordering, par levels, cycle counts, waste logs, stock accuracy, and product freshness with the CPU or roastery.
People Leadership
- Hire, onboard, train, coach, and performance-manage team members against clear KPIs.
- Develop coaching plans and recognition initiatives to build a high-performing culture.
Standards and Reporting
- Ensure HACCP, food safety, cleanliness, maintenance, opening and closing, and cash-control standards.
- Maintain accurate POS, inventory, and ERP dashboards and logs.
- Submit weekly performance reports with clear insights, actions, and follow-up.
Marketing and Guest Growth
- Execute limited-time offers, collaborations, and local store marketing initiatives with the Marketing team.
- Build strong community relationships and support guest growth.
Role Requirements
- Strong floor leadership, commercial awareness, operational discipline, and people management capability.
- Ability to lead daily front-of-house and back-of-house operations from the floor.
- Ability to manage outlet financial performance, budgeting, forecasting, staffing, and inventory.
- Passion for specialty coffee and exceptional guest experiences.
Preferred Qualifications
- Diploma is preferred.
- Three years of Floor Manager experience is preferred.
- Two years of café manager experience is preferred.
- English, Arabic, a driving license, and willingness to travel up to 25% are preferred.
Workplace
- Work is performed in person in Al-Ayn.
