Position Summary
Lead daily pastry and bakery preparation and execution to deliver high-quality, efficient, individualized service.
Operate under strict Public Health standards and company policies while maximizing cost efficiency and guest satisfaction.
Report to the Executive Chef and Executive Sous Chef and directly oversee confectioners and assistant pastry chefs.
Culinary Execution and Operations
- Manage pastry and bakery production for breakfast, lunch, teatime, dinner, special functions, and crew mess operations.
- Prepare buffet showpieces and show plates and coordinate pastry demonstrations.
- Accommodate special orders, dietary requirements, food allergies, and ingredient limitations.
- Assist with menu planning, recipe manuals, the corporate menu cycle, and production quality improvements.
- Manage food counts, requisitions, inventory, breakage, and waste.
Leadership and Team Management
- Supervise, train, and assist with induction of pastry team members.
- Monitor working and rest hours and manage manpower in compliance with ILO and MLC regulations.
- Enforce company uniform, grooming, and professional conduct standards.
