Kitchen and Production Operations
- Supervise daily kitchen and food production activities.
- Ensure production follows approved schedules and requirements.
- Allocate tasks to chefs, cooks, and kitchen helpers.
- Monitor preparation, cooking, portioning, packing, and dispatch.
- Ensure products follow standardized recipes and procedures.
Team Supervision
- Coordinate kitchen staff during daily operations.
- Prepare staff assignments and manage manpower according to production needs.
- Monitor attendance, discipline, productivity, and performance.
- Train staff on food preparation and operating procedures.
- Ensure staff follow company policies and kitchen procedures.
Food Quality and Safety
- Monitor food quality, taste, portion size, and presentation.
- Ensure correct food handling, storage, cooking, cooling, and temperature control.
- Maintain cleanliness and personal hygiene standards.
- Ensure compliance with HACCP and company food safety requirements.
- Report quality or food safety issues to the Executive Chef or management.
Stock and Cost Control
- Monitor raw material and ingredient usage.
- Minimize food wastage and maintain effective portion control.
- Coordinate daily raw material requirements with Stores.
- Check the quality and quantity of ingredients received.
