Key Responsibilities

  • Supervise daily operations of the Japanese kitchen and allocate duties across kitchen sections.
  • Monitor chefs, sushi chefs, commis, prep cooks, and helpers for performance and adherence to standards.
  • Ensure Japanese dishes, sushi, sashimi, ramen, tempura, robatayaki, donburi, sauces, and other menu items meet recipe and presentation requirements.
  • Monitor mise en place, ingredient freshness, seafood handling, portion control, seasoning, plating, and food quality.
  • Maintain HACCP, food safety, hygiene, sanitation, knife-handling, storage, labeling, dating, temperature-control, and FIFO procedures.
  • Check stock levels, reduce waste, control food costs, and communicate ingredient requirements.
  • Coordinate service timing and order accuracy with Front of House during busy periods.
  • Support production planning, menu changes, recipe cards, kitchen organization, and staff training.
  • Monitor attendance, grooming, discipline, cleaning checklists, equipment condition, and kitchen records.
  • Handle operational issues, report maintenance needs, and escalate major concerns to the Head Chef or Kitchen Manager.

Requirements

  • Minimum 2-4 years of experience in a Japanese restaurant, sushi restaurant, hotel, or similar food and beverage operation.
  • Strong knowledge of Japanese cuisine, kitchen operations, sushi, sashimi, Japanese sauces, rice preparation, seafood handling, and cooking techniques.
  • Strong knowledge of food safety, hygiene, HACCP, and temperature-control procedures.
  • Good leadership, team-management, communication, organizational, and time-management skills.
  • Ability to work in a high-volume, fast-paced kitchen and train junior kitchen team members.
  • Previous Kitchen Supervisor, Sous Chef, Chef de Partie, or Senior Chef experience is preferred.
  • Culinary qualification or professional Japanese cuisine training is advantageous.
  • Premium, casual dining, hotel, or high-volume Japanese restaurant experience is preferred.
