- Create, test, and develop new pastries, desserts, cakes, and seasonal items
- Lead research and development for signature pastry items and premium desserts
- Develop standardized pastry recipes with accurate ingredients and methods
- Oversee daily pastry operations including preparation, baking, finishing, and decoration
- Ensure all pastry items meet quality standards and presentation guidelines
- Design and update pastry menus in line with brand concept and profitability
- Calculate pastry item costs and ensure target margins
- Lead, train, supervise, and motivate the pastry team
- Monitor stock levels and coordinate with suppliers for premium ingredients
- Ensure compliance with food safety and hygiene regulations
Requirements
- Proven experience as Head Pastry Chef, Senior Pastry Chef, Pastry Sous Chef, or similar in a high quality establishment
- Strong ability to create new pastry recipes and lead R&D
- Excellent knowledge of pastry techniques, baking, chocolate, creams, doughs, and dessert presentation
- Strong understanding of pastry costing, production planning, hygiene, inventory, and team management
- Strong leadership, communication, creativity, and problem solving skills
- Ability to work under pressure while maintaining precision and consistency
- Experience in recipe standardization, SOP creation, and team training

Role Overview
- The Head Pastry Chef leads the full pastry direction and kitchen operations, developing new desserts and managing daily production with the highest standards of quality and hygiene.
Key Responsibilities
- Create, test, and develop new pastries, desserts, cakes, and seasonal items.
- Lead R&D for signature pastry items and premium desserts.
- Develop standardized pastry recipes with accurate ingredients and methods.
- Oversee daily pastry operations including preparation, baking, finishing, and decoration.
- Ensure all pastry items meet quality standards and presentation guidelines.
