Role Overview
Lead pastry and dessert production while maintaining consistent quality, efficient operations, and controlled wastage.
The role requires a hands-on, organized, creative, and commercially minded approach.
Production and Quality
- Lead day-to-day pastry and dessert operations.
- Prepare and supervise cakes, tarts, cookies, brownies, cheesecakes, tiramisu, macarons, éclairs, and other desserts.
- Ensure consistent taste, texture, presentation, and portion sizes.
- Develop new desserts, seasonal items, and creative pastry concepts.
- Plan production based on expected sales and stock levels to minimize waste.
- Maintain recipe cards, production sheets, and portion specifications.
Operations and Team Leadership
- Monitor ingredients, stock levels, and expiry dates and communicate ordering requirements.
- Maintain food costing and portion control to support profitability.
- Store and label products with production and expiry dates.
- Supervise, train, and guide pastry assistants and kitchen staff.
- Coordinate dessert requirements with the kitchen and management team.
- Maintain equipment and pastry workstations and manage busy production periods efficiently.
