About the Role

- Manage food quality and consistency by overseeing preparation, recipe compliance, and regular tasting of all dishes
- Introduce creative presentations and innovative concepts for menu offerings
- Control production and costs by adjusting output based on forecasts and ensuring effective food cost planning and monitoring
- Maintain portion control and presentation standards to ensure all dishes are visually appealing and consistent
- Ensure high standards of hygiene and food safety through regular coordination with the Hygiene Manager
- Oversee quality of ingredients by working closely with Purchasing and participating in supplier selection
- Lead menu development and innovation by planning new menus and encouraging team creativity
- Monitor guest satisfaction by reviewing feedback daily and engaging directly with guests
- Train and develop team members by conducting training sessions on new menus
- Collaborate with leadership including the Executive Chef and Director of Food & Beverage
Requirements
- Minimum of 2 years as Executive Chef or similar position in luxury hotel/s or fine dining sector
- Diploma or Degree in Culinary Arts, Hospitality Management, or a related field
- Strong knowledge of food quality standards, cost control, and kitchen operations
- Certified in food safety/hygiene (HACCP preferred)
- Proven leadership skills with the ability to train and motivate teams
- Creative mindset with experience in menu development and innovation
- Strong focus on guest experience and service excellence

About the Role
- As Executive Chinese Chef, you will be responsible for leading the preparation and presentation of all culinary offerings at Shang Palace with care and precision.
Key Responsibilities
- Manage food quality and consistency by overseeing preparation, recipe compliance, and regular tasting of all dishes.
- Introduce creative presentations and innovative concepts for menu offerings.
- Control production and costs by adjusting output based on forecasts and ensuring effective food cost planning and monitoring.
- Maintain portion control and presentation standards to ensure all dishes are visually appealing and consistent.
- Ensure high standards of hygiene and food safety through regular coordination with the Hygiene Manager and monitoring kitchen cleanliness.
- Oversee quality of ingredients by working closely with Purchasing and participating in supplier selection and goods inspection.
- Lead menu development and innovation by planning new menus, proposing items, and encouraging team creativity.
- Monitor guest satisfaction by reviewing feedback daily and engaging directly with guests to understand their expectations.
- Train and develop team members by conducting training sessions on new menus and maintaining high culinary standards.
- Collaborate with leadership including the Executive Chef and Director of Food & Beverage to align on objectives and strategy.
- Ensure operational excellence by setting service standards, monitoring performance, and participating in kitchen operations and restaurant setup.
- Work closely with the Marketing Team on promotions & campaigns.
About You
- Minimum of 2 years as Executive Chef or a similar position, with a proven track record of success in luxury hotel/s or fine dining sector.
- Diploma or Degree in Culinary Arts, Hospitality Management, or a related field.
- Strong knowledge of food quality standards, cost control, and kitchen operations.
- Certified in food safety/hygiene (HACCP preferred).
- Proven leadership skills with the ability to train and motivate teams.
- Creative mindset with experience in menu development and innovation.
- Strong focus on guest experience and service excellence.
- Ability to work in a fast paced, high pressure environment.
