Administration

  • Ensure F&B activities aligned with Corporate Strategy
  • Oversee preparation and updates of Departmental Operations Manuals
  • Conduct regular divisional communications meetings
  • Liaise with Culinary Division

Guest Satisfaction

  • Ensure all associates deliver brand promise and exceptional guest service
  • Spend time in public areas observing guest interactions
  • Resolve guest and internal customer complaints quickly

Finance

  • Maximize associate productivity through multi skilling and flexible scheduling
  • Ensure each profit centre operates to maximize profit
  • Assist in preparation of Annual Business Plan for F&B
  • Analyze business performance for accurate forecasting
  • Manage costs proactively based on KPIs
  • Participate in weekly yield and revenue management meetings
  • Control beverage programme including recipes and inventory

Marketing

  • Assist in preparation and update of Annual Marketing Plan
  • Evaluate market trends to keep operations competitive
  • Encourage Department Heads to seek marketing and PR opportunities

Operations

  • Ensure all brand standards are implemented
  • Monitor operations during peak periods
  • Ensure F&B Fundamentals are maintained
  • Work closely with Executive Committee members
  • Taste and monitor food and beverage products

Talent and Culture

  • Oversee recruitment and selection of F&B associates
  • Oversee punctuality and appearance of associates
  • Maximize effectiveness of Department Heads through training and coaching
  • Conduct annual Performance Development Discussions
  • Ensure training programmes are implemented
  • Encourage creativity and innovation
  • Ensure compliance with rules and regulations
