Job description
The Cost Controller manages food and beverage cost controls, outlet efficiency, inventory, purchasing, receiving, storage, production, pricing, and related reporting.
Core responsibilities
- Control food and beverage outlets for wastage, pilferage, and efficiency.
- Ensure food and beverage control procedures are followed across purchasing, receiving, storage, issuing, menu planning, production, portion control, pricing, and inventories.
- Administer cost-control systems to maximize F&B profits while maintaining quality and service standards.
- Check outlet cost of sales and ensure costs remain within budget.
- Prepare reports on daily food and beverage cost trends for management.
- Conduct surprise spot checks at all outlets.
- Spot-check receiving operations to verify scales and goods quality.
- Ensure store materials are issued only with requisition or department-head approval.
- Provide the Food and Beverage Manager with information for planning and control.
- Monitor stock levels and item-wise costs.
- Coordinate with restaurant management and finance to resolve F&B issues.
- Study weaknesses in F&B controls and suggest improvements.
