Job Summary
Prepare high-quality sushi and Japanese dishes while maintaining standards of food quality, presentation, hygiene, and kitchen safety.
Join the culinary team as a Chef de Partie – Sushi.
Key Responsibilities
- Prepare sushi, sashimi, maki, nigiri, rolls, and other Japanese dishes according to established recipes and presentation standards.
- Handle fresh fish, seafood, rice, vegetables, and other sushi ingredients safely and professionally.
- Maintain consistent food quality, portion control, taste, and presentation.
- Maintain storage and temperature control of raw materials and prepared food.
- Follow FIFO and FEFO procedures and minimize food waste.
- Maintain personal hygiene, food safety, and kitchen cleanliness.
- Clean and sanitize equipment, knives, utensils, and workstations.
- Monitor stock levels and report ingredient and supply requirements.
- Assist with preparation, mise en place, service, and closing duties.
- Work efficiently during busy service periods while maintaining quality and accuracy.
- Follow company recipes, SOPs, and food safety requirements.
- Support junior kitchen staff and report quality, equipment, hygiene, or food safety issues.
Requirements
- At least 2–3 years of experience as a Chef de Partie or Sushi Chef in a high-volume restaurant, hotel, or Japanese cuisine establishment.
