About the Role

Responsibilities
- Operate the sushi galley and prepare all sushi dishes to company standards
- Coordinate with wait staff to ensure proper cooking and accommodate special requests and food allergies
- Supervise personnel assigned to section, assign and delegate tasks
- Control production levels and recommend improvements for cost control
- Prepare daily electronic food requisitions and countercheck deliveries
- Maintain HACCP program and ensure public health standards are followed
- Maintain assigned area for US Public Health inspections
Requirements
- Minimum 2 years experience at CDP or Cook 1 level in upscale hotel, resort, or cruise ship sushi restaurant
- Culinary school degree required
- Ability to handle a wide range of raw fish and other ingredients
- Strong management, communication, problem solving, and decision making skills
- Working knowledge of computers and software such as Excel, Word, Crunchtime
- Ability to execute and train others in sushi making and Japanese cuisine
- Must be able to work in any section of a kitchen

Key Responsibilities
- Operate the sushi galley and prepare all food to highest standards for sushi dishes per company menus
- Coordinate with wait staff to ensure proper cooking considering special requests and food allergies
- Coordinate and supervise all personnel assigned to section, assign and delegate tasks
- Undertake recipe reviews daily and maintain recipe folders
- Control production levels and recommend ideas for improvements and cost controlling
- Prepare daily electronic food requisitions and countercheck deliveries
- Oversee any main section (Sauce, Entremetier, Fish, Roast, Outlet CDP, Tournant, Cold Kitchen) and its food production
- Maintain and ensure Public Health standards are followed (US, Anvisa, Shipsan, Canadian, Australian etc.)
- Ensure HACCP program is carried out correctly
- Maintain assigned area for US Public Health type inspections
- Report for duty at assigned times, follow supervisor's instructions, ensure personal appearance and hygiene per company rules
Qualifications and Education
- Minimum 8 years in upscale hotel, resort, cruise ship or convention banqueting service with at least 2 years as Chef De Partie
- Culinary school degree required
- Very strong management skills in multicultural and dynamic environment
- Very strong communication, problem solving, decision making, and interpersonal skills
- Superior customer service, teambuilding and conflict resolution skills
- Knowledge of principles for providing personalized services
- Strong planning, coaching, organizing, staffing, controlling, and evaluating skills
- Intermediate computer software skills required
- Good understanding of basic accounting principles
- Ability to write reports and business correspondence and establish rapport with Senior Officers and corporate office
